recipes

Hi all im back :-) Well ive been doing some cooking this week and came across a baileys cheesecake. So i gave it a go heres what it came out like it was yummy. So have a go yourself and tell me what you think.

Preparation method

  1. Melt the butter in a pan and add the crushed digestive biscuits. Mix well until the biscuits have absorbed all the butter.
  2. Remove from the heat and press into the bottom of a lined 18cm/7in springform tin. Place in the refrigerator and allow to set for one hour.
  3. Meanwhile, prepare the filling. Lightly whip the cream cheese then beat in the Irish cream and icing sugar. Fold in the whipped cream and grated chocolate. When smooth, spoon evenly onto the biscuits.
  4. Refrigerate and allow to set for a further two hours. Once set, remove and decorate with whipped cream and cocoa powder dusted over the top. Serve.

I recently read in the hairy bikers book a recipe for bread and butter pudding. I'm gonna give this a go, how about you?

  1. Preheat the oven to 180C/350F/Gas 4. Grease a 5 litre/9 pint ovenproof dish with butter.
  2. Thickly spread bread slices with butter and cut into triangles. Arrange half the bread, butter side up, in the bottom of the dish. Mix the fruit and sultanas together and sprinkle all the dried fruit and half the sugar over the layer of bread.
  3. Top with the remaining bread and butter pieces and sprinkle with the rest of the sugar.
  4. Beat the eggs and milk together and pour the mixture over the bread.
  5. Leave to stand for 15 minutes to allow the bread to absorb some of the liquid.
  6. Bake in the oven for 35 minutes, until the custard has set and the top is crisp and golden.
